Zucchini Chocolate Chip Cookies

I have never been a big baker. I love cooking because you do not have to follow specific set of guidelines. Instead you throw in whatever floats your boat. But with baking... not so much. You really have to follow the recipe to a to in order to have everything come out right. 

Anyway, I have started getting into baking since becoming a married woman. I decided to make zucchini chocolate chip cookies. And they turned out delicious plus getting some extra veggies. That's what I call success! Below is the recipe

Never thought I would see zucchini and chocolate chips in the same bowl.

I had batter left-over so I got my cupcake maker out and made some muffins for Daniel to have for breakfast.

Don't tell Daniel that they have zucchini in it!

In a medium sized bowl combine:
1 beaten egg
1/2 cup of butter, softened
1/2 cup of brown sugar
1/3 cup of honey
1 tablespoon of vanilla extract

In a large sized bowl combine:
2 cups of all purpose flour
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/4 teaspoon of cinnamon

In a small bowl combine:
12 oz bag of chocolate chips
1 medium sized zucchini (either shredded or food processed) 

Combine all three bowls together into the large bowl and then mix together (I used an electric mixer). 

Drop a spoonful onto a greased baking sheet and bake at 350 degrees F for 10 to 15 minutes. Then enjoy!

Well hello there!


My name is Brittany and I am a newlywed. My darling husband (Daniel) and I got married on May 21st of 2011. I am also still a full-time undergraduate student. Needless to say my senior year has been a little different than most people's. So I have decided to start a blog just sharing my life! 

So again I say, hi!
